Reliable Drying Rack Setup

The below setup keeps paper towel off the food so the grease won’t make it soggy but still absorb excess liquid.

1. Get a sheet pan
2. Line bottom with paper towel
3. Put cooling rack upside down on top of paper towel
4. Put ‘wet’‘oily’‘fried’ foods on rack
