Chicken Pesto Pasta Salad

Ingredients

  • penne
  • chicken
  • 1 red onion ; chopped
  • 1 cup pesto
  • salt to taste
  • pepper to taste (go ‘heavy’)

Directions

  • grill or pan cook chicken
  • set chicken aside to cool
  • cook 1/2 of the onion
  • cook penne
  • shred chicken
  • mix penne, chicken, raw onion, cooked onion, pesto, pepper, salt
  • serve

Notes

  • can be served hot or cold
