Balsamic Fig Sauce

Ingredients

  • 1 shallot
  • 2 tablespoon balsamic vinegar
  • 1 chicken stock concentrate
  • 1 tablespoon fig jam (cherry works too)
  • rosemary (to taste)
  • 1 tablespoon butter

Directions

  1. finely chop shallot
  2. heat pan on medium heat
  3. add shallot and rosemary to pan
  4. cook, tossing for 2-3 mins, until softened
  5. add jam, stock concentrate, 1/4 cup water and vinegar to pan
  6. stir to combine
  7. simmer for 2-3 minutes, until thickened
  8. remove from heat
  9. stir in butter
  10. season with salt and pepper to taste
