Balsamic Fig Sauce

Ingredients
- 1 shallot
- 2 tablespoon balsamic vinegar
- 1 chicken stock concentrate
- 1 tablespoon fig jam (cherry works too)
- rosemary (to taste)
- 1 tablespoon butter
Directions
- finely chop shallot
- heat pan on medium heat
- add shallot and rosemary to pan
- cook, tossing for 2-3 mins, until softened
- add jam, stock concentrate, 1/4 cup water and vinegar to pan
- stir to combine
- simmer for 2-3 minutes, until thickened
- remove from heat
- stir in butter
- season with salt and pepper to taste
