Cherry and Balsamic Glaze

Ingredients
- 1 shallot
- 2 tbsp balsamic vinegar
- 1 1/2 tbsp cherry jam (can use fig)
- 1/2 tsp sugar (optional)
- 1 tbsp butter
Directions
- thinly slice shallot
- add shallot to pan over medium heat
- toss until lightly caramelized ; 4-5 minutes
- add balsamic vinegar and simmer until syrupy and reduced by half
- swirl in jam and 1 tbsp water
- add 1/2 tsp sugar (if needed ; unlikely to be needed...)
- season with salt and pepper to taste
- remove pan from heat
- swirl in butter
