Ingredients: 3-6T melted butter/marg; 2 whole boned, skinned breasts; 1.5C saltine coarse crumbs; 0.25C parmesan cheese; 1/2 - 1 package **dry** ranch dressing mix

Parmigiano-Reggiano is always made with animal rennet, the rules of the designation require it. That particular cheese is not vegetarian. Generic parmesan is usually set with microbial rennet instead. The label will say which. ^

Directions

Cut and dip chicken into melted butter
Combine cracker crumbs, cheese and ranch dressing in a box (toss to combine)
Place few pieces at time chicken & shake to coat
Single layer coated pieces on lightly greased cookie sheet
450 degrees Fahrenheit for 7-9 minutes or until golden

Notes

Use unsalted fats to greatly reduce saltiness
Ranch dressing mixes tend to be very salty
