Easy Fancy Meatballs

Ingredients

• 1 shallot
• 2 cloves garlic
• 2 1/2 tablespoons ricotta cheese
• 1 egg
• 1/2 teaspoon salt
• 1/2 teaspoon pepper

Directions

1. cook shallot with garlic until shallot is soft
2. transfer to a large bowl
3. add remaining ingredients to bowl
4. mix well
5. line baking sheet with tin foil
6. form mixture into 1 1/2 inch balls and place on baking sheet
7. bake @ 375F for 15-20 mins
