Elote (Street Corn) Pasta Salad

Ingredients

• 1/2 tsp chipotle chili powder (ancho chili powder works too)
• 1/2 tsp ground cumin
• 1/2 tsp smoked paprika
• 1/2 tsp salt
• 1/4 tsp black pepper
• 2 cups frozen corn
• 1 cup red onion (diced)
• 1/2 cup poblano peppers (diced)
• 1/2 tsp garlic cloves (minced / smashed)
• 8 oz ditalini pasta (uncooked)
• 1/4 cup mayonnaise
• 1/4 cup greek yogurt
• 1 tbsp lime juice
• 1/2 cup queso fresco (crumbled)

Directions

1. mix spices togther in small bowl
2. large skillet, medium-high heat: corn, poblano, onion, garlic, half spice blend
3. cook ~5 minutes till veg softened and corn lightly charred
4. cook pasta, reserve 1/4 cup pasta water, rinse in cold water till cool
5. bowl: mix mayo, yogurt, lime juice, pasta water, remaining spice
6. large bowl: mix everything but 1/2 of cheese
7. chill at least 1 hour
8. serve with cheese on top
