Ingredients

  • 1 1/2 cup beef stock
  • 1 1/2 tbsp olive oil
  • 2 1/4 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 3 cloves garlic
  • 3 tbsp flour
  • 1 1/2 tbsp tomato paste
  • 3/4 cup dry red wine (cab / merlot / pinot / sav)
  • 1 1/s tsp Worcestershire sauceNote 1
  • 2 1/2 cup frozen veggie (corn / pea / carrot)
  • 2/3 cup shredded parmesan
  • 2 tbsp butter (melted)

Notes

  1. Worcestershire sauce usually contains anchovy (fish); a fish-free/vegan version exists

Directions

  1. make mashed potatoes and set aside (use butter/garlic for richer flavors)
  2. pre heat oven to 400F
  3. brown beef with salt, pepper, onion powder
  4. add garlic and stir 60 seconds
  5. add flour and stir 50 seconds (film will form on pan bottom)
  6. add red wine and deglaze pan
  7. add broth, tomato paste and Worcestershire
  8. add veggie and bring to light boil
  9. reduce heat, cover and simmer ~10 mins until sauce thickens
  10. In 13x9 inch pan add half filling then parmesan then rest of filling
  11. top with potato
  12. drizzle melted butter over potato
  13. cover with foil
  14. bake @ 400F for ~25-30 mins
