Ingredients
- 1 1/2 cup beef stock
- 1 1/2 tbsp olive oil
- 2 1/4 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 3 cloves garlic
- 3 tbsp flour
- 1 1/2 tbsp tomato paste
- 3/4 cup dry red wine (cab / merlot / pinot / sav)
- 1 1/s tsp Worcestershire sauceNote 1
- 2 1/2 cup frozen veggie (corn / pea / carrot)
- 2/3 cup shredded parmesan
- 2 tbsp butter (melted)
Directions
- make mashed potatoes and set aside (use butter/garlic for richer flavors)
- pre heat oven to 400F
- brown beef with salt, pepper, onion powder
- add garlic and stir 60 seconds
- add flour and stir 50 seconds (film will form on pan bottom)
- add red wine and deglaze pan
- add broth, tomato paste and Worcestershire
- add veggie and bring to light boil
- reduce heat, cover and simmer ~10 mins until sauce thickens
- In 13x9 inch pan add half filling then parmesan then rest of filling
- top with potato
- drizzle melted butter over potato
- cover with foil
- bake @ 400F for ~25-30 mins
