Shepherd's Pie (Parsnip)

Ingredients

• 12 ounces yukon gold potatoes
• 1 carrot
• 4oz parsnips
• 1/8oz chives
• 1 yellow onion, minced
• unsalted butter
• 1/4 cup heavy cream
• 12oz ground beef
• 1 tablespoon tomato paste
• 1 tablespoon flour
• 1/2 teaspoon Worcestershire sauce^{Note 1}
• 8oz chicken stock

Directions

1. pre heat oven to 450F
2. cut potatoes into 1 inch dice
3. cut parsnips and carrot into 1/2 dice
4. thinly slice chives
5. boil potatoes
6. mash potatoes with cream and butter ; set aside
7. brown beef and set aside
8. sautee carrot, parsnip and onion until soft
9. stir in tomato paste and ground beef
10. continue stirring 2-3 minutes until flavors meld
11. reduce heat to medium
12. sprinkle over flour and stir until no longer visible
13. add Worcestershire sauce and chicken stock
14. cook, stirring until thickened ; ~3 mins
15. transfer to baking dish
16. cover with mashed potatoes
17. bake until lightly browned on top ; ~5 mins
18. sprinkle with chives
