Shepherd's Pie (Parsnip)

Ingredients
- 12 ounces yukon gold potatoes
- 1 carrot
- 4oz parsnips
- 1/8oz chives
- unsalted butter
- 1/4 cup heavy cream
- 12oz ground beef
- 1 tablespoon tomato paste
- 1 tablespoon flour
- 1/2 teaspoon Worcestershire sauceNote 1
- 8oz chicken stock
Directions
- pre heat oven to 450F
- cut potatoes into 1 inch dice
- cut parsnips and carrot into 1/2 dice
- thinly slice chives
- mince onion
- boil potatoes
- mash potatoes with cream and butter ; set aside
- brown beef and set aside
- sautee carrot, parsnip and onion until soft
- stir in tomato paste and ground beef
- continue stirring 2-3 minutes until flavors meld
- reduce heat to medium
- sprinkle over flour and stir until no longer visible
- add Worcestershire sauce and chicken stock
- cook, stirring until thickened ; ~3 mins
- transfer to baking dish
- cover with mashed potatoes
- bake until lightly browned on top ; ~5 mins
- sprinkle with chives
