Shepherd's Pie (Parsnip)

Ingredients

  • 12 ounces yukon gold potatoes
  • 1 carrot
  • 4oz parsnips
  • 1/8oz chives
  • unsalted butter
  • 1/4 cup heavy cream
  • 12oz ground beef
  • 1 tablespoon tomato paste
  • 1 tablespoon flour
  • 1/2 teaspoon Worcestershire sauceNote 1
  • 8oz chicken stock

Notes

  1. Worcestershire sauce usually contains anchovy (fish); a fish-free/vegan version exists

Directions

  1. pre heat oven to 450F
  2. cut potatoes into 1 inch dice
  3. cut parsnips and carrot into 1/2 dice
  4. thinly slice chives
  5. mince onion
  6. boil potatoes
  7. mash potatoes with cream and butter ; set aside
  8. brown beef and set aside
  9. sautee carrot, parsnip and onion until soft
  10. stir in tomato paste and ground beef
  11. continue stirring 2-3 minutes until flavors meld
  12. reduce heat to medium
  13. sprinkle over flour and stir until no longer visible
  14. add Worcestershire sauce and chicken stock
  15. cook, stirring until thickened ; ~3 mins
  16. transfer to baking dish
  17. cover with mashed potatoes
  18. bake until lightly browned on top ; ~5 mins
  19. sprinkle with chives
