Name: Sour Cream Gravy
Ingredients: 2 tbsp butter / lard / oil; 1/2 cup minced onion / shallot; 2 - 3 tbsp flour (optional); 1 tbsp porcini powder (optional); 1 1/2 cups broth / stock (choose based on protein / diet); 1 tsp maggi / Worcestershire; 1/3 cup sour cream (full fat); salt to taste; pepper to taste

if skipped you must use porcini powder ^
if skipped you must use flour ^
a vegetable stock works here, so this can be made without meat ^
Worcestershire sauce contains anchovy (fish), so it is not vegetarian. Fish-free versions exist. ^
Maggi seasoning is vegan — no fish — so it is the fish-free choice here ^

Directions

melt / heat fat
brown onion / shallot over med-high heat for ~5mins
stir in flour / porcini
cook on med until color of coffee with cream or slightly darker
mix in broth & maggi / Worcestershire
cook down to consistency of melted ice cream
turn off heat & whisk in sour cream
add salt & pepper
