Sour Cream Gravy

Ingredients

  • 2 tbsp butter / lard / oil
  • 1/2 cup minced onion / shallot
  • 2 - 3 tbsp flour (optional)Note 1
  • 1 tbsp porcini powder (optional)Note 2
  • 1 1/2 cups broth / stock (choose based on protein / diet)Note 3
  • 1 tsp maggi / WorcestershireNote 4Note 5
  • 1/3 cup sour cream (full fat)
  • salt to taste
  • pepper to taste

Notes

  1. if skipped you *must* use porcini powder
  2. if skipped you *must* use flour
  3. a vegetable stock works here, so this can be made without meat
  4. Worcestershire sauce usually contains anchovy (fish); a fish-free/vegan version exists
  5. Maggi seasoning is vegan — no fish — so it is the fish-free choice here

Directions

  1. melt / heat fat
  2. brown onion / shallot over med-high heat for ~5mins
  3. stir in flour / porcini
  4. cook on med until color of coffee with cream or slightly darker
  5. mix in broth & maggi / Worcestershire
  6. cook down to consistency of melted ice cream
  7. turn off heat & whisk in sour cream
  8. add salt & pepper
