Tortellini Gratin

Ingredients

  • 1 yellow onion
  • 2 cloves garlic
  • 1/2 oz basil (to taste)
  • 16oz ground beef
  • 2 boxes crushed tomatoes (likely 2 16oz cans)
  • 18oz tortellini
  • 1/2 cup panko breadcrumbs
  • 1/4 cup parmesan cheese
  • 5oz spinach
  • 2 Tbsp sour cream
  • 4 tsp olive oil or canola or sunflower

Directions

  1. pre heat broiler to high
  2. bring large pot salted water to boil
  3. dice onion
  4. mince garlic
  5. finely chop basil
  6. heat drizzle of olive oil over medium high heat
  7. add onions and garlic
  8. toss until softened ; 4-5 mins
  9. add beef and break into pieces until browned
  10. add crushed tomatoes, basil and 1/2 cup water
  11. stir and reduce to a low simmer until thickened 4-5 mins
  12. add tortellini to boiling water ; cook until tender (3-4 mins)
  13. Combine panko, parmesan cheese, a drizzle of olive oil, salt and pepper in a small bowl
  14. transfer tortellini to pan with spinach and sour cream
  15. stir gently until spinach wilts
  16. transfer to baking pan and cover with breadcrumb mixture
  17. broil until brown ; ~2 mins

Notes

can burn easy under broiler, watch closely
