Tortellini Gratin

Ingredients
- 1 yellow onion
- 2 cloves garlic
- 1/2 oz basil (to taste)
- 16oz ground beef
- 2 boxes crushed tomatoes (likely 2 16oz cans)
- 18oz tortellini
- 1/2 cup panko breadcrumbs
- 1/4 cup parmesan cheese
- 5oz spinach
- 2 Tbsp sour cream
- 4 tsp olive oil or canola or sunflower
Directions
- pre heat broiler to high
- bring large pot salted water to boil
- dice onion
- mince garlic
- finely chop basil
- heat drizzle of olive oil over medium high heat
- add onions and garlic
- toss until softened ; 4-5 mins
- add beef and break into pieces until browned
- add crushed tomatoes, basil and 1/2 cup water
- stir and reduce to a low simmer until thickened 4-5 mins
- add tortellini to boiling water ; cook until tender (3-4 mins)
- Combine panko, parmesan cheese, a drizzle of olive oil, salt and pepper in a small bowl
- transfer tortellini to pan with spinach and sour cream
- stir gently until spinach wilts
- transfer to baking pan and cover with breadcrumb mixture
- broil until brown ; ~2 mins

can burn easy under broiler, watch closely
