Balsamic Fig Sauce

Ingredients

  • 1 shallot
  • 2 tablespoon balsamic vinegar
  • 1 chicken stock concentrate
  • 1 tablespoon fig jam (cherry works too)
  • rosemary (to taste)
  • 1 tablespoon butter

Directions

  • finely chop shallot
  • heat pan on medium heat
  • add shallot and rosemary to pan
  • cook, tossing for 2-3 mins, until softened
  • add jam, stock concentrate, 1/4 cup water and vinegar to pan
  • stir to combine
  • simmer for 2-3 minutes, until thickened
  • remove from heat
  • stir in butter
  • season with salt and pepper to taste
