Cherry and Balsamic Glaze

Ingredients

  • 1 shallot
  • 2 tbsp balsamic vinegar
  • 1 1/2 tbsp cherry jam (can use fig)
  • 1/2 tsp sugar (optional)
  • 1 tbsp butter

Directions

  • thinly slice shallot
  • add shallot to pan over medium heat
  • toss until lightly carmelized ; 4-5 minutes
  • add balsamic vinegar and simmer until syrupy and reduced by half
  • swirl in jam and 1 tbsp water
  • add 1/2 tsp sugar (if needed ; unlikely to be needed…)
  • season with salt and pepper to taste
  • remove pan from heat
  • swirl in butter
