No Milk Mashed Potatoes

red or russet potatoescanola or sunflower oil

boil potatoes whole with skins on until tenderdrain and cube potatoesplace cubes in large bowladd a good measure of oil to bowl and lightly start mashingcontinue massing and add more oil until the desired texture is obtainedadd small amounts of water to thin and smooth texture as you go
- garlic powder is a good spice
- fresh ground pepper is a good spice
