No Milk Mashed Potatoes

  • red or russet potatoes
  • canola or sunflower oil


  • boil potatoes whole with skins on until tender
  • drain and cube potatoes
  • place cubes in large bowl
  • add a good measure of oil to bowl and lightly start mashing
  • continue massing and add more oil until the desired texture is obtained
  • add small amounts of water to thin and smooth texture as you go
  • garlic powder is a good spice
  • fresh ground pepper is a good spice
