Porcupine Meatballs

Ingredients

Meatball Mix

  • 1 1/2 pounds ground beef preferably 85% lean
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup long grain, white rice (jasmine)

Gravy

  • 2 cups beef broth
  • 1 small onion thinly sliced
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce (optional, for depth)

Instructions

  1. Mix meatball mix
  2. Mix gravy in pot big enough to hold all meatballs with gravy
  3. Make meatballs and place in gravy
  4. Simmer meatballs 30-45 minutes in gravy
